kikkoman masters 2019

The Kikkoman Masters 2019 is now open for entries. 

Kikkoman, the world’s leading soy sauce manufacturer is calling on professional chefs to take part in its annual competition. Entrants are required to devise two courses using Kikkoman Naturally Brewed Soy Sauce and submit their recipes by 28th June 2019.

A panel of judges will work through all entries and will then invite ten of the very best to the Restaurant Show on Monday 30th September to take part in a 90-minute cook-off. Judges include Mark Edwards, Nobu; Adam Handling of The Frog by Adam Handling; Simon Hulstone of The Elephant; Pip Lacey, Chef Owner at Hicce; David Mulcahy, Sodexo/Craft Guild of Chefs, Brian Turner, CBE and Fergus Wilford, Gravetye Manor and Kikkoman Masters 2018 winner. One lucky contestant will be crowned Kikkoman Masters Champion 2019 and win a 7-day trip to Japan.

Bing-yu Lee, General Manager of Kikkoman UK, said: “Last year was very successful with some excellent chefs cooking in the final. This year we have adjusted the criteria slightly to include a vegetarian starter and ensure allergens in recipes are highlighted.  Our Kikkoman Masters 2018 winner Fergus Wilford is just back from an inspired trip to Japan and he will be sharing highlights of his trip with finalists.”

Kikkoman is popular with chefs for its unique taste and aroma and has recently been given a glowing endorsement by the Craft Guild of Chefs, appearing as one of its approved products for foodservice. It is made using just four ingredients – soybeans, wheat, salt and water – and its natural brewing process gives it a superior depth of flavour. Valued for adding a special umami savouriness to dishes, Kikkoman is now widely used as a multi-purpose seasoning in ethnic and western cooking.
