60 seconds with Nuno Mendes
Lisbon-born Nuno Mendes is world-renowned as an intensely ingredients-focused chef who serves up food as subversive and imaginative as it is delicious. You can join him and his head chef, Patrick Powell with an exclusive opportunity to see some signature dishes as the duo talk about their food inspiration.
Ahead of the session next week we talked to Nuno to find out more about what we can expect to see and learn.
Tell us a little more about Chiltern Firehouse
André Balazs opened Chiltern Firehouse in February 2014, located in the heart of London's Marylebone neighbourhood. The Firehouse, one of the first purpose built fire stations in London, is the first international property in his collection of bespoke, luxury hotels which include the renowned Mercer in New York and the iconic Chateau Marmont in Hollywood, both acclaimed restorations of historic landmark buildings, and celebrated for their unique, creative clientele.
The restaurant with large open kitchen is at the heart of Chiltern Firehouse. The beautifully restored former fire carriage entrances of the restaurant open fully onto the recently restored doublewide sidewalk. I spent sixteen years in the United States, working with such world-renowned chefs as Wolfgang Puck and Jean-Georges Vongerichten (also the chef at The Mercer in New York), and our menu represents the diversity and seasonality of modern American cooking.
What insights will you and Patrick be sharing at The Restaurant Show?
We’ll be showcasing some of the dishes from Chiltern Firehouse as well as some ideas we are working on for the next menu.
What's your biggest inspiration when it comes to food?
The seasons! However, we are not bound by anything really. We follow seasons of course but it might be an area of the kitchen or a new grill or even a new ingredient we discovered when travelling.
What's your favourite dish to cook?
It would be Kimchi Ramen Noodles.
What else are you looking forward to seeing on your visit to The Restaurant Show?
I’m really looking forward to seeing the Young National Chef of the Year competition which also takes place on Tuesday.
