Top wine tips from Peter McCombie
Peter McCombie will be running two insightful sessions at The Restaurant Show on Monday 3rd October.
At 12pm he will lead an interactive blind tasting session with champagne, and some sparkling alternatives, before explaining how to price, market and sell each selection. Today’s customers are looking for more than just ‘a glass of fizz’ – and this is a great way to meet their needs and boost sales.
You can also join Peter at the Liquid Hub at 2pm when he talks about recession proofing your wine offer. Whatever the consequences of Brexit, customers are sure to be seeking out better value from your wine list. Peter will talk you through smart solutions, from championing lesser-known regions, looking for fresh locations in established wine-growing countries and sourcing off-beat bottles that deliver on quality and price.
Ahead of the session we asked Peter to share his top tips for success:-
1. Don’t discount, add value. For example: give away a taster glass of dessert wine with specific desserts
2. Don’t mistake cheapness for value. When reviewing wines on your list don’t compromise quality for a lower price.
3. Look after your staff. The good ones keep your customers happy and keep them coming back.
To watch and learn from Peter you will need to register for a visitor pass for The Restaurant Show.
